Gildori Chicken: Japan’s most special poultry

Japan is famous for its legendary, meticulously raised meat. Beef beef is a household name, and black pork is highly praised for its rich flavor and soft texture. But, even in Japan, few people realize there is the equivalent of chicken. This is Jidori, like you’ve tried before.

Jidori is “local chicken” and refers to specific, carefully breeding free-range Japanese chickens that are prized for their rich flavor, solid texture and nutritious meat. The taste talks to himself. Jidori Chicken is rich, delicious and satisfying without the need for seasoning or rich seasoning, rather than a taste, but the flavor itself comes.

Where to try Jidori chicken in Tokyo

In Japan, agricultural standards are strictly stipulated, and only 1% of the chickens in Japan meet the requirements to be eligible for Jidori, making it a rare delicacy. Among them, Hakata Jidori in Fukuoka Prefecture is one of the most famous varieties. These free-range chickens are raised among small numbers of independent farmers, with plenty of space to roam, feed a high-quality diet and stay in a low-stress environment. Since the breed’s rare and labor-intensiveness is to increase these poultry, it’s unlikely that you’ll find this quality chicken in your local Japanese supermarket. Instead, there are some specialty restaurants that offer specialty dishes for Jidori. We visited one of them: Hakata Jidori Fukuei Kumiya Ginzaunder the rumble train tracks in Shimbashi, a hidden place that has been serving Chicken Gitori since 2013. This restaurant specializes in Hakata Jidori chicken varieties, including mizutaki (Hot pot dish using collagen-packed soup ingredients), Tsukune Meatballs, fried Karachi, and even Carpaccio made with chicken ham.

Located in a warm modern space on the street, the restaurant is designed for slow and intentional dining. All seating is located in private or semi-private rooms, including traditional rooms where you can stretch your legs under the sunken floor. Some rooms even ignore the exquisite pine trees, adding a natural elegance to the environment.

We tried three signature dishes from the restaurant. First, the fried chicken wings are coated with a gentle chili seasoning and fry until golden and crispy. The meat is juicy and refreshing, without grease or heavy. Next comes the grilled chicken thighs with beautifully arranged condiments including Kyoto Black Shichimispecial pepper, seaweed salt from Nagasaki and sun-dried Sicilian salt. We encourage you to try meat first and then try different seasonings. To our surprise, we learned that the rich taste of the meat was nothing more than a light salt.

Finally, we tasted their chicken Nanban: Bid thigh Fry the meat with crispy batter, topped with sweet and light tartar sauce, thick on the eggs and light on the sugar and full of warmth.

But Guidori should be there in the best way. The flavor is cut the rest, and farmers will raise so much love and care to raise these birds. I hope more people understand its particularity.”
